Something that always sounds appealing in the dead of winter: soup. It doesn’t even matter what kind as long is it is hot and delicious. One of my favorite kinds of soup is the Zupa Toscana from Olive Garden..it’s just hearty and soothing to the soul! However, I wanted to make a version that was a little lower on the carb side of things (in the interest of losing some weight). So here is my take! It’s suuuuuuper easy.
SPICY SAUSAGE AND KALE SOUP:
Ingredients:
1 lb ground hot Italian sausage, broken into small pieces (you can use mild if the heat is too much)
1/2 yellow onion
1/2 cup chopped pancetta (or bacon if you prefer)
2 cups heavy cream
2 cups chicken broth
4 cloves garlic
1/4 tsp red pepper flakes
1/4 tsp basil
1/4 tsp oregano
1/4 tsp thyme
2 1/2 cups chopped kale
Directions:
1. In a large pot, sauté the sausage, onion, and pancetta on medium-high heat until the sausage is completely cooked through, about 15 minutes
2. Stir in the heavy cream, chicken broth, garlic, red pepper flakes, basil, oregano, and thyme. Allow the mixture to boil, then let simmer for 10 minutes.
3. Add the chopped kale and mix into the soup. Let simmer for an additional 10 minutes. Salt and pepper according to your preference.
4. Serve and enjoy (:
If you want to go for the full effect, throw in some chopped and boiled potatoes!
