Spinach and Baked Eggs

Any one who really knows me knows that breakfast foods are my FAVORITE foods. I could eat breakfast for every meal of the day. Seriously. Bacon, eggs, pancakes, muffins…doesn’t it sound delicious?

I set out on a quest to find the perfect, quick, and easiest recipe to cook at any point of the day. And voila! I found this rather tasty recipe for Spinach and Baked Eggs (via Skinny Taste). I decided to make it a little more to my liking..

What you’ll need:

Serves 2

2 cups of spinach

1 1/2 TBS of finely chopped red onions

1 clove garlic

1 TBS extra virgin olive oil

2 large eggs (I prefer organic brown eggs)

1 TBS of shredded Asiago Cheese

2 ramekins

salt and pepper to taste

 

First, preheat your oven to 425 F. Then, turn on a burner and add the olive oil to a medium or large sized skillet.

spinach-bake-onions Add your onions and garlic and saute for a couple of minutes, or until the garlic starts to brown a bit.

Add your spinach to the pan and cook until the spinach has just wilted. This should take no more than a few minutes.

Once it’s wilted, divide the spinach amongst 2 ramekins, making sure you keep the garlic in the pan (this can be discarded at this point).

Form a well in the spinach and crack your eggs into the small hole.

Remember, it’s okay to be childish sometimes..or all the time..

Sprinkle salt and pepper over the eggs. Then, place the ramekins onto a small baking sheet and stick them into the oven. Depending on how you like your eggs, the time they spend baking will vary. I like mine slightly runny, so it was in for 15 minutes. If you like your yolk a little harder, I’d go for 17 minutes.

They should look somewhat like this when they are finished.

Sprinkle your cheese…

And tuck in!

I usually add a dash of smoked paprika to it as well. Just do add a bit of a kick. It’s deliciouss.
